Is it possible to create a defect (sub-task) in jira from Practitest?

Apologies for the delayed reply.
Please note that we currently support reporting sub-tasks for the integration with JIRA Cloud but have plans to add such support for JIRA Server soon.
In the meantime please create a Task from PractiTest into JIRA Server and then convert it to sub-task as shown in a screenshot below:
